Elkhorn Specialty Cookie Recipe

Any regular to Panorama will tell you that there’s a healthy dose of foodie-ism here, we ski to eat and eat to ski. It’s ingrained in the culture, just like a love of ski racing, powder filled tree runs and wide open corduroy.

Perched halfway up the mountain, the Elkhorn Cabin is one of my favourite locations. The views are stunning, the historical cabin warm and cozy, but what I come for are the crave worthy baked treats. I can’t even begin to count the many times I’ve skied by and been drawn in by the smell of cookies, fresh from the oven and cooling on trays beside the run.

So while we are all staying home and channelling our inner Martha Stewart, here’s a special recipe courtesy of Nicole & AJ from the Elkhorn Cabin so you can enjoy a bite of Panorama at home. Bon appétit!

Makes 20 - 40 cookies depending on how large you make the cookies.

Dry Ingredients

4 cups all-purpose (plain) flour

2 cups oats

3 tablespoons of cinnamon

1-2 teaspoons of sea salt

2 teaspoons of baking soda

2 teaspoons of baking powder

Wet Ingredients

2 eggs (yolk and whites)

2 egg yolks

1 tablespoon vanilla

2 cups butter

2 cups brown sugar

1 cup granulated sugar

1-2 cups chocolate chips (extra for chocolate drizzle)

Zest of one orange

Chocolate Drizzle

Melt 1/4 cup coconut oil with quarter cup chocolate chips or cacao powder, stir and drizzle over cooled cookies

Method
  1. Pre-heat oven to 350ºF (175ºC) and prepare a baking tray with a layer of parchment paper. 
  2. Combine all dry ingredients in a bowl, whisk together and then set aside.
  3. In a seperate bowl, beat the softened butter (room temp) and sugar together until smooth.
  4. Add eggs, vanilla and orange zest together and beat until well combined.
  5. Gradually add the dry and wet ingredients together until well combined.
  6. Mix in the chocolate chips.
  7. Use a 1/4 cup to make balls of the dough. 
  8. Place the cookies 2-4 inches apart on the baking tray and sprinkle with shredded coconut.
  9. Bake for 15-20 minutes at 350ºF (175ºC). Allow cookies to cool for 20 mins before drizzling with chocolate, then eat!
